Farmhouse Meatloaf

Meatloaf Recipe

 

I have been asked for a gluten-free version of my meatloaf.  I didn’t have one, so I came up with one.  Here it is! Homemade “Farmhouse Meatloaf,” all these ingredients can be found on your local farm or homestead. Gluten-free, delicious! I love it!  This is also a Paleo recipe.  Plus, it’s way healthier than my original recipe, which is also delicious.

Ingredients for Farmhouse Meatloaf:

2 pounds ground beef (grass fed preferred)

1 cup carrots, finely chopped

1 cup spinach, finely chopped

1 small red onion, finely chopped

4 garlic cloves, minced

2 eggs, beaten

2 tablespoons tomato paste

1 teaspoon salt (optional)

1/2 teaspoon ground black pepper

1 tablespoon dried parsley (or 2 tablespoons fresh parsley. finely chopped)

1/4 teaspoon dried rubbed sage (or 1/2 teaspoon fresh sage, finely chopped)

1/4 teaspoon dried basil (or 1/2 teaspoon fresh basil, finely chopped)

Instructions for Farmhouse Meatloaf:

In a large mixing bowl, combine all ingredients.  Using your hands, work the ingredients together.  I wash my hands well before and after digging in.  My kids enjoy squishing the meat.

Meatloaf Recipe 2Place meat mixture in a loaf pan or, my personal favorite, a 10-inch iron skillet.

Bake at 350 degrees F for 60 to 80 minutes (depending on your oven and the pan you use).  I use a meat thermometer to be sure it reaches 170 degrees internal temperature.
