I love Reese Cups, so when Reese came out with Reese Cup Minis I had to figure out a way to use them in a recipe. After much experimentation, my daughter and I came up with this scrumptious recipe. Peanut Butter Cake Brownies with Reese Cup Minis. They were a huge hit with my family, so I thought I would share.
2/3 cups salted butter, softened
2/3 cups Jif Creamy Peanut Butter
1 cup pure cane granulated sugar (Domino is my favorite)
1 cup pure cane light brown sugar (again, Domino is my favorite)
2 teaspoons pure vanilla extract
1 3/4 cup unbleached all-purpose flour
1/2 cup cocoa powder
2 teaspoons baking powder (Aluminum–Free Rumford is my favorite)
1/2 teaspoon sea salt
In a large mixing bowl, cream together butter, peanut butter, sugar and brown sugar. Add eggs, one at a time, beating well after each addition. Add vanilla.
Now for the yummy part…gently fold in the Reese Minis. Try not to drool too much here. This is why we didn’t use the whole bag of Minis. We only used half of the second bag so we would have something to tie us over till the brownies are done, so hang in there.
