Mama’s Spicy Ginger Crinkle Cookies

These spicy ginger cookies are made with molasses and ginger.  The dough is rolled into a ball, rolled in sugar and then baked.  You get a delicious spicy cookie with a beautifully crackled sugary top.

My husband is a fan of odd, at least in my opinion, strong flavored cookies like;  molasses, agave,  butterscotch, caramel, ginger, and cinnamon.  He also likes chewy cookies, which is easy to do with chocolate chip or peanut butter, but ginger snaps??  He asked me to make a ginger snap without the snap, so this is what I came up with.  I definitely met his approval with this spicy gem.  They turned out chewy and delicious, and made my kitchen smell spicy and sweet.

If you like them crispier, bake them a little longer.

Ingredients for Spicy Ginger Crinkle Cookies:

3/4 cup shortening

1 cup packed pure cane brown sugar

1 egg

1/4 cup fancy molasses

1 tsp pure vanilla extract

2 cups unbleached all-purpose flour

2 tsp baking soda

2 tsp ground ginger

1 tsp cinnamon

1/2 tsp ground allspice or cloves

1/2 tsp sea salt

1/4 cup pure cane granulated sugar

Instructions for Spicy Ginger Crinkle Cookies:

Preheat oven to 350 degrees F.

In a large mixing bowl; beat shortening with brown sugar until fluffy.  Then, beat in egg, molasses, and vanilla until smooth.  In separate bowl, whisk together flour, baking soda, ginger, cinnamon, allspice, and salt; stir into molasses mixture a little at a time.

Roll dough into balls (about a tablespoon per ball).  Roll in granulated sugar to coat and place about 2 inches apart on parchment paper-lined or greased cookie sheets.

Bake at 350 degrees F for about 9-11 minutes or until tops are crackled on top.  Then, cool on a cooling rack.  Enjoy!

This recipe makes about 46 delicious, spicy ginger cookies.
