Mama’s Peach Jam Bars

Peach Jam Bars

 This cookie bar recipe is very versatile.  You can choose your favorite jam to replace the Peach Jam.  

My parents have an orchard with lots of peach trees.  Each year they are willing to share loads of peaches with my  family.  I am not sure what variety they are, but they are perfect for making Peach Jam, Peach Jelly or Peach Butter.  We make a lot of each.

We make a lot of other jam flavors each year including; blueberry, blackberry, strawberry, and more, so we always have plenty.  You can only eat so many Peanut Butter and Jelly Sandwiches.  So, I like to come up with new ways to use it.  Peach Jam Bars are one of many ways I use jam in a recipe.

These can be served cooled as a bar or fresh from the oven with whipped cream or your favorite ice cream (that is my favorite way).

Ingredients for Peach Jam Bars:

3/4 cup butter

1 cup sugar

1 egg

2 cups all purpose flour

1/4 teaspoon baking powder

1/2 cup chopped hickory nuts or black walnuts

1/2 teaspoon vanilla extract

1 jar (12 ounces) peach jam, or your favorite flavor of jam

Instructions for Peach Jam Bars:

In a small mixing bowl, cream butter and sugar.  Add egg and mix well.  Combine the flour and the baking powder. then gradually add it to the butter mixture.  Add hickory nuts or walnuts and vanilla, mixing thoroughly.

Press two-thirds of the dough into a greased 13 by 9 inch baking dish.  Spread dough with peach jam.

Then crumble the remaining dough over the jam.

Bake at 350 degrees F for 30 to 35 minutes or until golden brown.  Remove from oven to a wire rack to cool, cut into bars.  Enjoy!  Makes 36 bars.

    Great recipe! I added my homemade pumpkin butter with some of our apples that were canned. Really yummy. Thanks for a keeper.
