Homemade Vanilla Coconut Milk Ice Cream

Coconut Milk Ice Cream in freezer

My Homemade Vanilla Coconut Milk Ice Cream Recipe was made out of necessity.

As I have gotten older, I have found I take after my dad, who was lactose intolerant. I love ice cream, but coconut ice cream at the grocery store is very expensive and has a lot of other ingredients in it that I don’t want.

I had a Homemade Vanilla Ice Cream Recipe I have used for many years, so I replaced the half and half with coconut milk and here you have it, Homemade Vanilla Coconut Milk Ice Cream.

Ingredients for Homemade Vanilla Coconut Milk Ice Cream:

2 cups full fat coconut milk

½ cup pure coconut sugar (This gives your ice cream a caramelized flavor and a tannish color.)

1 teaspoon pure vanilla extract

Dash of sea salt

Instructions for Homemade Vanilla Coconut Milk Ice Cream:

Pour all ingredients into a quart jar, replace lid tightly, and shake until sugar is dissolved. I have the kids pass the jar around, taking turns shaking it. 

Pour into a 1 quart electric ice cream freezer and allow ice cream to churn and freeze until stiff. This should take about 30-40 minutes, depending on your ice cream freezer.  Enjoy!

This recipe is best when served immediately, or with your favorite homemade toppings. You can also put it in a chilled bowl in the freezer for later, but it won’t be as soft.

    HI Lanelle! These ice cream recipes look so yummy! I recently made pancakes with coconut milk and they were delicious. I’d love to try ice cream with it but I don’t own an ice cream maker 🙁 I’m curious, what kind of maker do you have? would you recommend it?

      Thanks for stopping by! I love these coconut milk ice cream recipes. They allow me to eat ice cream again. 😉
      I have a “Cuisinart ICE-40 Flavor Duo Frozen Yogurt-Ice Cream & Sorbet Maker.” Fancy, huh. I like it. I have had it for a long time. I can make 1-2 kinds of ice cream at the same time. Yes, I would recommend it. I put a link to it on Amazon in my post-“electric ice cream freezer.”
