
Who would have thought such an easy inexpensive recipe would be such a big hit with my family. I came across this Ham Gravy with Biscuits recipe in a magazine, so I tweaked it (as usual), and gave it a try. Now my family requests it all the time. It is the perfect recipe to use up leftover ham after a holiday or get together.

Ingredients for Ham Gravy with Biscuits:
Homemade Biscuits (one batch)
2 cups cubed fully cooked ham
1 medium onion, chopped
6 tablespoons butter
1 teaspoon chicken bouillon granules
2 teaspoons Worcestershire sauce
1/4 teaspoon pepper
6 tablespoons unbleached all-purpose flour
3 1/2 cups milk
6 hard-cooked eggs, chopped (I use my handy egg slicer and slice the egg one way then turn the egg and slice it the other way)
2 tablespoons minced fresh parsley (or 1 tablespoon of dried)
Instructions for Ham Gravy with Biscuits:
Prepare one recipe of Mama’s Homemade Biscuits.
In a large skillet, saute ham and onion in butter for 3-4 minutes or until onions are crisp-tender.
Stir in bouillon cubes, Worcestershire sauce and pepper. In a small mixing bowl, combine the flour and milk until smooth; gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened.
Gently stir in the eggs and parsley.
Split biscuits in half horizontally, place on dinner plate, and serve with ham mixture.

- I have replaced the boiled eggs with boiled potatoes in a pinch. I usually serve this dish with a vegetable side.
