Mama’s Black Bean Corn Salsa

Black Bean Corn Salsa

 

I love this salsa recipe, I prepare it the night before a get-together and put it in the fridge. This gives the flavors time to combine. It has the the perfect combination of black beans, corn, peppers, onions, and herbs.

Ingredients for Black Bean Corn Salsa:

1/4 cup mayonnaise

2 tablespoons lime juice

1/2 teaspoon ground cumin

1-15 ounce can black beans, rinsed and drained

1-11 ounce can whole kernel corn

1 cup chopped Roma tomatoes

1/2 cup chopped red onion

2 tablespoons chopped fresh cilantro

1 teaspoon canned, diced jalapeno peppers or for less spice I have uses diced green chilies (optional)

Instructions for Black Bean Corn Salsa:

Blend Mayonnaise, lime juice, and cumin in a medium bowl. Next, stir in all remaining ingredients. Refrigerate and allow about one hour for the flavors to combine. Serve chilled with your favorite corn chips or pita chips.
