Beef and Noodles Recipe

Beef and Noodles is an easy recipe that I always have the ingredients in my pantry for and some of them come from our garden.

This is a perfect recipe to make to warm you on a cold winter day.   The ingredients are easy to use and convenient to store, as they don’t go bad quickly.

There are three fresh ingredients I use at the beginning of a lot of my dishes; carrots, onions, and garlic. This combo smells so good while it is cooking, it’s hard to wait until it’s done.

Ingredients for Beef and Noodles:

2 tablespoons olive oil

4 large carrots, chopped

1 medium onion, chopped

5 garlic cloves, minced  (I use my food chopper)

1 – 28 ounce canned beef

2 – 32 ounce boxes beef broth or homemade

Salt and Pepper to taste

2 – 12 ounce bags of egg noodles or 24 ounces of homemade noodles

Instructions for Beef and Noodles:

In your large stock pot or dutch oven, add olive oil and heat over medium heat, til just warm.  Then, add carrots and onions and saute until carrots start to soften and onions are slightly translucent.  Next, add the garlic, saute until tender.

Add the canned beef and break it apart in the pan with a spatula or spoon, while combining it with the vegetables.  Then add the beef broth, salt, and pepper.

Last, when all the other ingredients are cooked through, add 3-4 cups of water (enough to fill the pan to about 3/4 full).   Add egg noodles, cook according to package instructions. Enjoy!
